Instructions
In a saucepan, combine sugar and evaporated milk. Bring to a boil, stirring constantly.
Reduce heat and simmer for 5 minutes, stirring frequently.
Remove from heat and stir in chopped cherries and vanilla extract. Let cool slightly.
In a mixing bowl, melt chocolate chips in the microwave or over a double boiler.
Stir in chopped peanuts into the melted chocolate.
Drop spoonfuls of the cherry mixture onto a baking sheet lined with parchment paper.
Cover each cherry mound with the chocolate-peanut mixture.
Let candies cool and set before serving.
