Cheesy Amish Breakfast Casserole
A hearty and cheesy breakfast casserole perfect for a family breakfast or brunch.

Main Ingredients
- 1 lb Bacon diced
- 1 cup Onion chopped
- 6 Eggs beaten
- 4 cups Frozen hash brown potatoes thawed
- 2 cups Cheddar cheese shredded
- 1 ½ cups Cottage cheese
- 1 ¼ cups Swiss cheese shredded
Preheat oven to 350°F (175°C).
In a large skillet, cook bacon and onion until bacon is crisp and onion is tender. Drain excess fat.
In a large bowl, combine the remaining ingredients. Stir in bacon mixture.
Transfer to a greased 9x13 inch baking dish.
Bake, uncovered, for 35-40 minutes or until a knife inserted near the center comes out clean.
Let stand for 10 minutes before cutting.
