Ingredients 

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoon Sugar
  • 4 tablespoon Butter, melted

Filling

  • 16 oz Cream cheese, softened
  • cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • ½ cup Sour cream

Instructions 

  1. Preheat oven to 325°F (163°C). Line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each cupcake liner.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
  4. Divide the cream cheese mixture evenly among the cupcake liners. Bake for 20-25 minutes or until the centers are set.
  5. Let the cupcakes cool completely, then refrigerate for at least 2 hours before serving.
