  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter softened
  • 1 cup champagne
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 4 egg whites

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the egg whites one at a time, beating well after each addition.
  4. Gradually add the flour mixture to the butter mixture, alternating with the champagne. Begin and end with the flour mixture.
  5. Pour the batter into the prepared cake pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
