Ingredients 

Main Ingredients

  • 2 cups ricotta cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup candied fruit, chopped
  • ¼ cup mini chocolate chips
  • 1 sponge cake, sliced into 3 layers
  • ½ cup orange juice
  • ¼ cup rum (optional)
  • 1 cup heavy cream, whipped
  • ¼ cup pistachios, chopped

Instructions 

  1. Mix ricotta, sugar, and vanilla until smooth.
  2. Fold in candied fruit and chocolate chips.
  3. Place one cake layer on a plate, brush with orange juice (and rum if using).
  4. Spread half the ricotta mixture on the cake.
  5. Repeat with the second layer.
  6. Top with the third layer, brush with remaining juice.
  7. Cover the cake with whipped cream.
  8. Garnish with pistachios.
  9. Chill for at least 2 hours before serving.
