Ingredients

  • 1 cup raw cashews soaked in water for at least 2 hours
  • 1 cup water
  • 2 tablespoons nutritional yeast
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper freshly ground

Instructions 

  1. 1. Drain and rinse the soaked cashews.
  2. 2. In a blender, combine the cashews, water, nutritional yeast, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  3. 3. Pour the mixture into a saucepan and heat over medium heat, stirring constantly until the sauce thickens, about 5-7 minutes.
  4. 4. Serve over pasta or use as a sauce for vegetables.
