Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 carrot diced
  • 1 cup cherry tomatoes halved
  • 2 cups spinach chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat, and simmer for 15 minutes or until water is absorbed.
  3. 3. In a separate pan, heat the olive oil over medium heat. Add the diced carrot and cook until tender.
  4. 4. Add the cherry tomatoes and spinach to the pan and cook until the spinach is wilted.
  5. 5. Combine the cooked quinoa with the vegetables. Season with salt and black pepper to taste.
  6. 6. Serve warm.
