Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, beat together the oil and eggs. Stir in the grated carrots and crushed pineapple.
  4. Combine the wet and dry ingredients, mixing until just blended. Fold in the walnuts if using.
  5. Pour the batter into the prepared pan. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
