Ingredients

  • 4 large carrots peeled into ribbons
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1 teaspoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. Peel the carrots into ribbons using a vegetable peeler.
  2. 2. Heat the olive oil in a frying pan over medium heat.
  3. 3. Add the minced garlic and sauté for about 1 minute.
  4. 4. Add the carrot ribbons and cook for 2-3 minutes, until slightly tender.
  5. 5. Drizzle with lemon juice and season with salt and pepper to taste.
  6. 6. Serve immediately.
