Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts optional

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Add oil and eggs, one at a time, mixing well after each addition.
  4. Stir in grated carrots and walnuts.
  5. Pour batter into prepared pan.
  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
