Ingredients

  • 1 cup Butter softened
  • 1 cup Brown Sugar packed
  • ½ cup Granulated Sugar
  • 2 Eggs large
  • 1 teaspoon Vanilla Extract
  • 1 ½ cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Salt
  • 2 cup Old-Fashioned Oats
  • 1 cup Carrots shredded
  • ½ cup Raisins
  • ½ cup Walnuts chopped

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, cinnamon, and salt; stir into the creamed mixture until just blended.
  5. Mix in the oats, carrots, raisins, and walnuts.
  6. Drop by rounded spoonfuls onto ungreased baking sheets.
  7. Bake for 12 minutes in the preheated oven, or until golden brown.
  8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
