Carrot and Ginger Soup
A warm, comforting soup with the zing of ginger and sweetness of carrots.

Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 lb carrots, peeled and chopped
- 4 cups vegetable broth
- 1 cup coconut milk
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the garlic and ginger, cook for another 2 minutes.
Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until carrots are tender.
Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
Return the soup to the pot, stir in the coconut milk, and heat through. Season with salt and pepper to taste.
