Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the garlic and ginger, cook for another 2 minutes.
  4. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until carrots are tender.
  5. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in the coconut milk, and heat through. Season with salt and pepper to taste.
