Caprese Quinoa Salad Recipe
A fresh and healthy salad combining the classic flavors of Caprese with protein-packed quinoa.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup fresh mozzarella balls halved
- 1 cup fresh basil leaves chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- to taste salt and pepper
1. Rinse the quinoa under cold water.
2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
4. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, mozzarella, and basil.
5. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss to combine.
6. Serve immediately or chill in the fridge for later.
