Ingredients 

Main Ingredients

  • 1 cup fresh ginger root peeled and sliced thin
  • 2 cups water
  • 1 cup sugar

Instructions 

  1. Peel and slice the ginger root thinly.
  2. In a saucepan, combine ginger slices and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Drain the ginger slices, reserving ¼ cup of the water.
  4. Return ginger and reserved water to the saucepan. Add sugar and bring to a boil, then reduce heat and simmer until ginger is translucent and syrup is thickened, about 15 minutes.
  5. Transfer ginger slices to a baking sheet lined with a cooling rack. Let dry for at least 2 hours.
