  • 2 cups diced potatoes

Instructions 

  1. Cook bacon in a skillet until crispy. Remove and set aside.
  2. In the same skillet, cook diced potatoes and onions until tender.
  3. Beat eggs in a bowl, then pour over the potatoes and onions.
  4. Stir until eggs are cooked through.
  5. Crumble bacon and mix into the eggs. Season with salt and pepper.
