Ingredients 

Main Ingredients

  • 1 whole Calabaza squash peeled and cubed
  • 4 pieces Chicken thighs boneless, skinless
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cloves Garlic minced
  • 1 cup Chicken broth

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Season chicken thighs with salt and pepper. Add to skillet and cook until browned on both sides, about 5-7 minutes per side.
  3. 3. Remove chicken from skillet and set aside.
  4. 4. In the same skillet, add garlic and cook until fragrant, about 1 minute.
  5. 5. Add cubed calabaza squash and chicken broth. Bring to a simmer.
  6. 6. Return chicken to the skillet. Cover and cook until squash is tender and chicken is cooked through, about 20 minutes.
  7. 7. Serve hot and enjoy!
