Ingredients 

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon Cajun seasoning
  • 1 lb penne pasta
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cook until browned.
  3. Add onions, bell peppers, celery, and garlic. Cook until softened.
  4. Stir in chicken broth, diced tomatoes, and Cajun seasoning. Bring to a boil.
  5. Add pasta, reduce heat, and simmer until pasta is cooked and liquid is absorbed.
  6. Season with salt and pepper to taste. Serve hot.
