Main Ingredients
- 1 large Butternut Squash peeled, seeded, and cubed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- ½ teaspoon Ground Nutmeg
1. Heat a large pot over medium heat. Add a splash of oil, then add the chopped onion and garlic. Cook until softened.
2. Add the cubed butternut squash to the pot. Cook for a few minutes, stirring occasionally.
3. Pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer until the squash is tender, about 20-25 minutes.
4. Use a blender to puree the soup until smooth. Return the soup to the pot.
5. Stir in the coconut milk, salt, pepper, and nutmeg. Heat through, then serve hot.
