Butternut Squash Salad Recipe
A refreshing and nutritious salad featuring roasted butternut squash.

Main Ingredients
- 1 whole Butternut squash peeled and cubed
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 4 cups Mixed greens
- ½ cup Feta cheese crumbled
- ¼ cup Pumpkin seeds toasted
Preheat your oven to 400°F (200°C).
Place the cubed butternut squash on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat.
Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized. Let cool.
In a large mixing bowl, combine the mixed greens, roasted butternut squash, feta cheese, and toasted pumpkin seeds.
Toss gently to combine. Serve immediately.
