  • 1 whole Butternut squash peeled and cubed
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 cups Mixed greens
  • ½ cup Feta cheese crumbled
  • ¼ cup Pumpkin seeds toasted

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cubed butternut squash on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat.
  3. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized. Let cool.
  4. In a large mixing bowl, combine the mixed greens, roasted butternut squash, feta cheese, and toasted pumpkin seeds.
  5. Toss gently to combine. Serve immediately.
