  • 1 medium butternut squash peeled, seeded, and diced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 loaf baguette sliced into ½ inch slices
  • ¼ cup goat cheese crumbled
  • 2 tablespoon honey
  • 1 tablespoon fresh thyme chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced butternut squash with olive oil, salt, and black pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
  4. While the squash is roasting, arrange the baguette slices on another baking sheet and toast in the oven for 5-7 minutes, until golden brown.
  5. Top each toasted baguette slice with a spoonful of roasted butternut squash, a sprinkle of goat cheese, a drizzle of honey, and a pinch of fresh thyme.
  6. Serve immediately and enjoy!
