Butternut Squash Crostini

Main Ingredients
- 1 medium butternut squash peeled, seeded, and diced
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 loaf baguette sliced into ½ inch slices
- ¼ cup goat cheese crumbled
- 2 tablespoon honey
- 1 tablespoon fresh thyme chopped
Preheat oven to 400°F (200°C).
In a mixing bowl, toss the diced butternut squash with olive oil, salt, and black pepper.
Spread the squash on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
While the squash is roasting, arrange the baguette slices on another baking sheet and toast in the oven for 5-7 minutes, until golden brown.
Top each toasted baguette slice with a spoonful of roasted butternut squash, a sprinkle of goat cheese, a drizzle of honey, and a pinch of fresh thyme.
Serve immediately and enjoy!
