Ingredients 

Main Ingredients

  • 1 medium Butternut squash peeled and cubed
  • 1 can Black beans drained and rinsed
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 8 small Tortillas
  • 1 cup Salsa
  • 1 cup Avocado diced
  • 1 cup Cilantro chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, chili powder, and cumin. Spread on a baking sheet and roast for 25-30 minutes, until tender.
  3. In a skillet, warm black beans over medium heat.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble tacos by placing roasted butternut squash and black beans on tortillas. Top with salsa, avocado, and cilantro.
