Ingredients 

Filling

  • 1 cup brown sugar
  • ½ cup corn syrup
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 egg beaten
  • 1 cup raisins

Pastry

  • 12 pre-made tart shells

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine brown sugar, corn syrup, melted butter, vanilla extract, and beaten egg. Mix well.
  3. Place raisins in the bottom of each tart shell.
  4. Pour the filling mixture over the raisins, filling each tart shell about ⅔ full.
  5. Bake in preheated oven for 12-15 minutes, until the filling is set and the pastry is golden brown.
  6. Let cool before serving.
