Ingredients

  • 2 cups Mochiko (sweet rice flour)
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • 2 cups Coconut milk
  • 1 cup Milk
  • ½ cup Butter, melted
  • 2 teaspoon Vanilla extract
  • 3 large Eggs

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine mochiko, sugar, and baking powder.
  3. In another bowl, whisk together coconut milk, milk, melted butter, vanilla extract, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Pour the batter into a greased 9x13 inch baking dish.
  6. Bake for 1 hour or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Let it cool completely before cutting into squares.
