Buffalo Chicken and Roasted Potato Casserole
A hearty casserole with buffalo chicken and roasted potatoes, perfect for a comforting dinner.

Main Ingredients
- 2 cups chicken breast, cooked and shredded
- 4 cups potatoes, diced
- 1 cup buffalo sauce
- 1 cup cheddar cheese, shredded
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt and pepper
Preheat your oven to 400°F (200°C).
In a mixing bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
Spread the potatoes in a baking dish and roast for 25-30 minutes, until tender and golden.
In the same mixing bowl, combine the shredded chicken with buffalo sauce.
Once the potatoes are done, add the buffalo chicken mixture on top of the potatoes in the baking dish.
Sprinkle shredded cheddar cheese over the top.
Bake for another 20 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
