Main Ingredients
- 1 ½ cups creamy peanut butter
- ½ cup butter softened
- 1 teaspoon vanilla extract
- 3 ½ cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
In a large mixing bowl, beat the peanut butter, butter, and vanilla extract until smooth.
Gradually add powdered sugar, beating until combined.
Shape into 1-inch balls and place on a baking sheet lined with wax paper. Chill for 30 minutes.
In a microwave-safe bowl, melt the chocolate chips and shortening, stirring until smooth.
Insert a toothpick into each peanut butter ball and dip into melted chocolate, leaving a small portion of peanut butter visible at the top.
Place back on the baking sheet and refrigerate until the chocolate is set.
