Brownie Ice Cream Sandwich Recipe

Brownies
- 1 cup Butter melted
- 2 cups Sugar
- 4 Eggs
- 1 cup Cocoa Powder
- 1 cup All-purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Vanilla Extract
Ice Cream
- 1 quart Vanilla Ice Cream softened
Preheat oven to 350°F (175°C). Grease a baking pan.
In a mixing bowl, combine melted butter and sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla.
Combine cocoa, flour, salt, and baking powder. Gradually stir into the egg mixture until well blended. Spread the batter evenly into the prepared pan.
Bake for 20 to 25 minutes. Do not overcook. Cool in the pan, then cut into squares.
Take one brownie square, top with a scoop of softened ice cream, and place another brownie square on top to make a sandwich. Repeat with remaining brownies and ice cream.
Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
