Brined and Smoked Chicken Thighs Recipe
Delicious brined and smoked chicken thighs, perfect for a backyard BBQ.

Brine
- 4 cups water
- ¼ cup kosher salt
- ¼ cup brown sugar
- 2 cloves garlic, minced
- 1 tablespoon black peppercorns
Chicken
- 8 pieces chicken thighs bone-in, skin-on
1. In a large container, combine water, kosher salt, brown sugar, minced garlic, and black peppercorns. Stir until salt and sugar are dissolved.
2. Submerge chicken thighs in the brine. Cover and refrigerate for at least 4 hours, preferably overnight.
3. Preheat your smoker to 225°F (107°C).
4. Remove chicken thighs from the brine and pat dry with paper towels.
5. Place chicken thighs in the smoker and smoke for about 2 hours or until the internal temperature reaches 165°F (74°C).
6. Remove from smoker and let rest for 10 minutes before serving.
