Add the water, olive oil, flour, salt, sugar, and yeast to the bread machine pan in the order recommended by the manufacturer.
Select the Dough cycle and start the machine.
When the cycle is complete, transfer the dough to a greased baking sheet and spread it out to your desired thickness.
Cover and let rise for 30 minutes.
Preheat the oven to 400°F (200°C).
Make indentations with your fingers all over the surface of the dough, drizzle with a little more olive oil, and sprinkle with coarse salt and any desired herbs.
Bake for 20-25 minutes, or until golden brown.
Let cool slightly before slicing and serving.
