Ingredients

  • 1 cup milk
  • ½ cup vegetable oil
  • 1 teaspoon salt
  • 2 cups tapioca flour
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten

Instructions 

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together the milk, oil, and salt.
  3. Slowly add the tapioca flour and garlic, stirring until smooth.
  4. Mix in the cheese and eggs until well combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
  6. Bake for 15-20 minutes, until the tops are lightly golden.
  7. Remove from oven and let cool slightly before serving.
