Ingredients 

Main Ingredients

  • 1 cup Mixed Dried Fruit
  • 1 cup Water
  • ½ cup Brown Sugar
  • ½ cup Butter
  • 1 teaspoon Baking Soda
  • 1 teaspoon Mixed Spice
  • 2 Eggs beaten
  • 1.5 cups Self-Raising Flour

Instructions 

  1. 1. Preheat your oven to 150°C (300°F).
  2. 2. In a saucepan, combine mixed dried fruit, water, brown sugar, butter, baking soda, and mixed spice. Bring to a boil, then simmer for 5 minutes. Let it cool.
  3. 3. Once cooled, add beaten eggs and mix well.
  4. 4. Fold in the self-raising flour until well combined.
  5. 5. Pour the mixture into a greased and lined baking tin.
  6. 6. Bake for 1.5 to 2 hours, or until a skewer inserted into the center comes out clean.
  7. 7. Let the cake cool in the tin before turning out onto a wire rack.
