Crust
- 1.5 cups All-purpose flour
- 0.5 cup Unsalted butter cold, cut into cubes
- 0.25 cup Granulated sugar
- 1 pinch Salt
- 1 unit Egg yolk
- 2 tablespoon Ice water
Filling
- 3 cups Fresh blueberries
- 0.5 cup Granulated sugar
- 2 tablespoon Cornstarch
- 1 tablespoon Lemon juice
- 1 teaspoon Lemon zest
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
Add egg yolk and ice water, mix until dough comes together. Press dough into a tart pan and refrigerate for 15 minutes.
In another bowl, mix blueberries, sugar, cornstarch, lemon juice, and lemon zest. Pour filling into the chilled crust.
Bake for 40 minutes or until the crust is golden and the filling is bubbly. Let it cool before serving.
