Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Butter softened
  • 2 Eggs large
  • 1 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Blueberries fresh or frozen
  • 1 tablespoon Lemon zest

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract and lemon zest. Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Fold in the blueberries.
  5. Pour the batter into the prepared cake pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
