Ingredients 

Galette Dough

  • 1.5 cups all-purpose flour
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.25 cup ice water

Blueberry Filling

  • 2 cups fresh blueberries
  • 0.25 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Form the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. In another bowl, mix blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla extract.
  5. Roll out the dough on a floured surface into a 12-inch circle. Transfer to the prepared baking sheet.
  6. Place the blueberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges over the filling.
  7. Bake for 45 minutes or until the crust is golden and the filling is bubbly. Let cool before serving.
