Ingredients 

Crust

  • 1.5 cups Graham Cracker Crumbs
  • 0.5 cups Melted Butter

Filling

  • 16 oz Cream Cheese softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs

Topping

  • 2 cups Blueberries fresh or frozen
  • 0.5 cup Sugar
  • 1 tablespoon Cornstarch
  • 0.25 cup Water

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a pie pan to form the crust.
  3. In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust. Bake for 30 minutes or until the center is set. Let it cool.
  5. In a saucepan, combine blueberries, sugar, cornstarch, and water. Cook over medium heat until the mixture thickens and the blueberries burst.
  6. Let the blueberry topping cool, then spread it over the cooled cream cheese pie. Refrigerate for at least 2 hours before serving.
