  • 1 cup blackberries
  • 1 cup sugar divided
  • ½ cup butter melted
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. Sprinkle ½ cup of sugar evenly over the bottom of the pan. Arrange the blackberries on top.
  3. In a mixing bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, beat the remaining ½ cup of sugar with the melted butter until creamy. Add the egg and vanilla extract, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  6. Pour the batter over the blackberries in the cake pan, spreading it evenly.
  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then invert it onto a serving plate. Serve warm or at room temperature.
