Ingredients 

Main Ingredients

  • 1 cup black rice uncooked
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 carrot julienned
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce low sodium
  • 1 teaspoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 2 tablespoons green onions chopped

Instructions 

  1. Cook the black rice according to package instructions. Set aside.
  2. Heat olive oil in a wok over medium-high heat.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add bell peppers, carrot, and broccoli. Stir-fry for 5-7 minutes.
  5. Add cooked black rice, soy sauce, and sesame oil. Stir well to combine.
  6. Garnish with green onions and serve hot.
