Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 can Black beans, drained and rinsed
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 8 small Tortillas
- 1 cup Shredded lettuce
- 1 cup Diced tomatoes
- ½ cup Shredded cheese
- ¼ cup Sour cream
- 1 tablespoon Chopped cilantro
Heat olive oil in a skillet over medium heat.
Add diced onion and cook until soft, about 5 minutes.
Stir in minced garlic and cook for another minute.
Add black beans, ground cumin, and chili powder. Cook until heated through, about 5 minutes.
Warm tortillas in a separate skillet or microwave.
Assemble tacos by placing a spoonful of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and chopped cilantro.
