Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 8 small Tortillas
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • ½ cup Shredded cheese
  • ¼ cup Sour cream
  • 1 tablespoon Chopped cilantro

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until soft, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add black beans, ground cumin, and chili powder. Cook until heated through, about 5 minutes.
  5. Warm tortillas in a separate skillet or microwave.
  6. Assemble tacos by placing a spoonful of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and chopped cilantro.
