Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans Black beans, drained and rinsed
  • 4 cups Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • to taste Salt and pepper
  • 1 Lime, juiced
  • ¼ cup Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add black beans, vegetable broth, cumin, and chili powder. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Use a blender to puree the soup until smooth.
  7. Season with salt and pepper to taste.
  8. Stir in lime juice and chopped cilantro before serving.
