  • 1 can corn drained
  • 1 red bell pepper diced
  • ¼ cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • ¼ cup cilantro chopped
  • 2 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add lime juice, salt, and black pepper. Stir well to combine.
