Birria Quesa Tacos Recipe
Delicious Birria Quesa Tacos with tender beef and melted cheese.

Beef Birria
- 2 lbs Beef chuck roast
- 2 cups Beef broth
- 4 Dried guajillo chiles
- 2 Dried ancho chiles
- 1 medium Onion, chopped
- 4 cloves Garlic
- 1 teaspoon Cumin
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Tacos
- 12 Corn tortillas
- 2 cups Shredded cheese
- 1 cup Chopped cilantro
- 1 cup Diced onions
- 2 cups Birria broth
1. Rehydrate chiles in hot water for 20 minutes.
2. Blend chiles, onion, garlic, cumin, oregano, salt, and pepper with some beef broth until smooth.
3. In a large pot, combine beef, chile mixture, and remaining beef broth. Simmer for 3 hours until beef is tender.
4. Shred beef and set aside. Reserve broth.
5. Dip tortillas in reserved broth, then cook on a skillet with shredded cheese and beef. Fold and cook until crispy.
6. Serve tacos with chopped cilantro, diced onions, and a side of broth for dipping.
