Ingredients 

Beef Birria

  • 2 lbs Beef chuck roast
  • 2 cups Beef broth
  • 4 Dried guajillo chiles
  • 2 Dried ancho chiles
  • 1 medium Onion, chopped
  • 4 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Tacos

  • 12 Corn tortillas
  • 2 cups Shredded cheese
  • 1 cup Chopped cilantro
  • 1 cup Diced onions
  • 2 cups Birria broth

Instructions 

  1. 1. Rehydrate chiles in hot water for 20 minutes.
  2. 2. Blend chiles, onion, garlic, cumin, oregano, salt, and pepper with some beef broth until smooth.
  3. 3. In a large pot, combine beef, chile mixture, and remaining beef broth. Simmer for 3 hours until beef is tender.
  4. 4. Shred beef and set aside. Reserve broth.
  5. 5. Dip tortillas in reserved broth, then cook on a skillet with shredded cheese and beef. Fold and cook until crispy.
  6. 6. Serve tacos with chopped cilantro, diced onions, and a side of broth for dipping.
