Berry Rhubarb Parfait
A delightful parfait combining the tartness of rhubarb with the sweetness of berries.

Parfait Ingredients
- 1 cup rhubarb, chopped
- ½ cup sugar
- 1 cup mixed berries fresh or frozen
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
- ½ cup granola
In a saucepan, combine rhubarb and sugar. Cook over medium heat until rhubarb is tender, about 10 minutes.
Add mixed berries to the saucepan and cook for another 5 minutes. Let cool.
In a mixing bowl, whisk together Greek yogurt and vanilla extract.
Layer the rhubarb mixture, yogurt, and granola in parfait glasses. Repeat layers.
Serve immediately or chill in the refrigerator until ready to serve.
