Ingredients 

Main Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup cooked quinoa
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheese cheddar or your choice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, half of the shredded cheese, cumin, chili powder, salt, and black pepper.
  3. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  4. Top the stuffed peppers with the remaining shredded cheese.
  5. Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the cheese is melted and bubbly.
  6. Serve hot and enjoy!
