Ingredients

  • 4 medium beets trimmed and scrubbed
  • 4 oz goat cheese crumbled
  • 2 cups mixed greens
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and place on a baking sheet. Roast for 30 minutes or until tender.
  2. 2. Let the beets cool, then peel and slice them.
  3. 3. In a mixing bowl, combine mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
  4. 4. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss gently to combine.
  5. 5. Serve immediately.
