Ingredients 

Salad Ingredients

  • 4 medium beets trimmed and scrubbed
  • 4 oz goat cheese crumbled
  • 4 cups mixed greens
  • ¼ cup walnuts toasted

Dressing Ingredients

  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions 

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
  3. 3. Let the beets cool, then peel and slice them.
  4. 4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  5. 5. In a large bowl, combine the mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
  6. 6. Drizzle the dressing over the salad and toss gently to combine.
  7. 7. Serve immediately.
