Beet Goat Cheese Salad
A refreshing salad with roasted beets, creamy goat cheese, and a simple vinaigrette.

Salad Ingredients
- 4 medium beets trimmed and scrubbed
- 4 oz goat cheese crumbled
- 4 cups mixed greens
- ¼ cup walnuts toasted
Dressing Ingredients
- 3 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- to taste salt and pepper
1. Preheat the oven to 400°F (200°C).
2. Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
3. Let the beets cool, then peel and slice them.
4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
5. In a large bowl, combine the mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
6. Drizzle the dressing over the salad and toss gently to combine.
7. Serve immediately.
