  • 2 medium beets roasted and diced
  • 4 oz goat cheese softened
  • 1 baguette French bread sliced into ½ inch pieces
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1 pinch salt
  • 1 pinch black pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place sliced baguette on a baking sheet and brush with olive oil. Toast in the oven for about 10 minutes or until golden brown.
  3. In a mixing bowl, combine roasted beets, goat cheese, honey, salt, and pepper. Mix well.
  4. Spread the beet and goat cheese mixture onto the toasted baguette slices.
  5. Serve immediately and enjoy!
