Beet and Goat Cheese Crostini

Main Ingredients
- 4 slices Baguette cut into ½ inch slices
- 2 medium Beets roasted and diced
- 4 oz Goat cheese softened
- 2 tablespoon Olive oil
- 1 tablespoon Balsamic vinegar
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. Preheat oven to 375°F (190°C).
2. Place baguette slices on a baking sheet and brush with olive oil. Bake for 10-12 minutes or until golden and crispy.
3. In a mixing bowl, combine diced roasted beets, balsamic vinegar, salt, and pepper.
4. Spread softened goat cheese on each crostini.
5. Top with beet mixture and serve immediately.
