  • 4 slices Baguette cut into ½ inch slices
  • 2 medium Beets roasted and diced
  • 4 oz Goat cheese softened
  • 2 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 pinch Salt to taste
  • 1 pinch Black pepper to taste

Instructions 

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Place baguette slices on a baking sheet and brush with olive oil. Bake for 10-12 minutes or until golden and crispy.
  3. 3. In a mixing bowl, combine diced roasted beets, balsamic vinegar, salt, and pepper.
  4. 4. Spread softened goat cheese on each crostini.
  5. 5. Top with beet mixture and serve immediately.
