Beef Tongue Tacos

Main Ingredients
- 1 whole Beef tongue about 3-4 lbs
- 1 large Onion peeled and halved
- 4 cloves Garlic peeled
- 2 teaspoon Salt
- 1 bunch Cilantro chopped, for garnish
- 8 small Corn tortillas warmed
- 1 cup Salsa your choice
1. Rinse the beef tongue under cold water.
2. Place the tongue in a large pot and cover with water. Add the onion, garlic, and salt.
3. Bring to a boil, then reduce heat and simmer for about 4 hours, or until the tongue is tender.
4. Remove the tongue from the pot and let it cool slightly. Peel off the skin and discard.
5. Slice the tongue into thin strips.
6. Serve the sliced tongue on warm corn tortillas, topped with chopped cilantro and your favorite salsa.
