Ingredients 

Main Ingredients

  • 4 bell peppers any color
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese cheddar or mozzarella
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a skillet, cook ground beef and onion over medium heat until beef is browned. Add garlic and cook for another minute.
  4. Stir in cooked rice, tomato sauce, salt, and pepper. Simmer for 5 minutes.
  5. Stuff each bell pepper with the beef and rice mixture. Place in a baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese, and bake for another 10 minutes until cheese is melted and bubbly.
