Beef and Rice Stuffed Bell Peppers
Delicious and hearty stuffed bell peppers filled with a savory mixture of beef and rice.

- 4 bell peppers any color
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion chopped
- 2 cloves garlic minced
- 1 cup tomato sauce
- 1 cup shredded cheese cheddar or mozzarella
- to taste salt and pepper
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds and membranes.
In a skillet, cook ground beef and onion over medium heat until beef is browned. Add garlic and cook for another minute.
Stir in cooked rice, tomato sauce, salt, and pepper. Simmer for 5 minutes.
Stuff each bell pepper with the beef and rice mixture. Place in a baking dish.
Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese, and bake for another 10 minutes until cheese is melted and bubbly.
