Instructions
Chop the chocolate and place it in a heatproof bowl.
Heat the cream and butter in a saucepan until just boiling.
Pour the hot cream mixture over the chocolate and let it sit for a minute.
Stir until smooth and glossy.
Chill the mixture in the fridge for about 1-2 hours until firm.
Scoop small amounts and roll into balls.
Roll the truffles in cocoa powder to coat.
