Banana Coconut Loaf

- 3 ripe bananas mashed
- ½ cup coconut oil melted
- ½ cup sugar
- 2 eggs beaten
- 1 teaspoon vanilla extract
- 1 ½ cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup shredded coconut
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, whisk together the mashed bananas, melted coconut oil, and sugar.
Add the beaten eggs and vanilla extract, and mix well.
In another bowl, combine the flour, baking soda, and salt. Gradually add this to the banana mixture, stirring until just combined.
Fold in the shredded coconut.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
